Mahi-mahi
Also known as the common dolphinfish, mahi-mahi is a large and colorful fish, and its bright golden and blue scales are a beautiful sight. Mahi-mahi is well-associated with Hawaii, as it is used so frequently in Hawaiian cuisine. The peak months for finding mahi-mahi are February-March, June-July, and September-October.
Marlin
Two species of marlin can be caught around the shores of Hawaii. The blue marlin is sought out as a challenge for sports fishing, as it puts up a great fight. The striped marlin is less often found, but its vibrant blue stripes are worth looking out for between February and May.
Wahoo
The wahoo is known in Hawaii as ono, which means ‘good to eat,’ and has a similar taste to mackerel. Its back is an iridescent blue, and its shining silver body is striped with vibrant blue bars. Its speed makes it a prized game fish, and it is most commonly found between April and July.
